As far as I know, a sidechain is an automation of a channel volume to coincide with the beat. Daft Punk used it alot, it made that sort of "breathing" sound, like in One More Time.

French house producers started it I think, but then annoyances like Deadmau5 took over with it and made crappy boring mainstream house.

Sidechaining is when one sound makes place for another. If your kick is playing, and you´re sidechaining your synth to your kick (or the other way around :P), the volume of the synth will go down to make place for the kick.

The question is really good: "What exactly is sidechain ?" - The answers were all fool's crap.

Anyways;

Sidechain is when an second sound source triggers something on the first sound source. Like if you have an weapon and ask it to somebody scream to you when he sees the enemy, to you pull the trigger. This is mostly used on dynamics, like compressors, gates, expanders... because it's more "useful" for mixdown and creative effects, but this kind of thing is used on vocoders, distortions, synths, mastering things...
