Recently I have been looking at tracks and notice that the length of build ups and breakdowns are odd as in they can go for 10 bars or 30 bars but still sound like the track is constructed properly with 16/32/48 climaxes and mid intros.
Can someone explain this to me and link me some theory about it?

As breakdowns usually consist of mainly atmospheric elements and an absence of kicks, there is a lot more leeway with how long or short you can make them. Since there isn't a strong rhythm-keeping element present, it doesn't sound odd to extend or shorten a breakdown to a particular length. Additionally, a lot of breakdowns aren't laid out at the same BPM as the rest of the track, and so will not display a standard length of bars (if a producer has sampled some sort of orchestral piece, for example, they may not want to stretch it to 150BPM due to it sounding unnatural, and so will just keep it at its original BPM). Besides, it's not something you should be focusing on anyway - forget about what lengths things usually are, just make it sound good. That's all that matters.
